Most businesses are fine on a hosted endpoint. It comes down to where the data has to stay, or what the model has to sound like. This is the work for the second kind.
Custom AI model development covers two things a hosted endpoint cannot offer you at all. The first is a model that runs on infrastructure you own, so records never leave your network. The second is a model tuned to your own material, whether that means the language of your industry or the voice your software answers in.
A general model behind somebody else's API is the right answer most of the time, and it is worth saying so. It stops being the right answer when the data cannot leave, or when the cost per call outgrows a server.
Some material cannot be sent to a third party. That rules out a hosted endpoint.
Per call pricing is cheap until volume arrives. At a certain point your own hardware is simply cheaper.
Industry terms get mangled by a model trained on everything. Tuning on your own material fixes what prompting cannot.

Languages yes, accents less well than the marketing suggests. Word error rates climb with an unfamiliar accent or background noise, which is measurable and worth measuring on your own recordings before committing. Tuning on your own audio is the fix, and it is a large part of why this service exists.
Consent gets asked for in the interface before anything records, and what happens to the audio afterwards is decided in the same conversation. Store reviews look closely at anything touching a microphone, so those decisions belong in the build rather than at submission.
On the device when the audio cannot travel or the connection is unreliable, and in the cloud when the reasoning matters more. Smaller local models are noticeably weaker, so the honest version is that this is a trade rather than a free choice.
When data residency requires it, or when the volume makes per call pricing more expensive than a server. Below those thresholds a hosted endpoint with retention switched off is usually the better answer, and we will say so in week two.
Getting audio into your system, transcribed, and turned into something the software can act on. The transcription is the easy half. Deciding what a sentence means and what to do about it is where the work is.
